Hello, i like to change the nozzle Diamter. How can i chance the setting for the nozzle diameter in Snapmaker Luban 3.7.0 ?

Unfortunately this is not possible in Luban.
I would suggest you to pick another Slicer, like Cura, for this.

That’s not true.
SM even provides profiles for Cura and simply3d.

I don’t think that was up there when I downloaded the cura profiles. Or I just missed it.
It doesn’t say it will void the warranty to use Cura. It says if the machine is damaged from using third party software then it will void the warranty. There are a lot of standard disclaimers in any warranty that manufacturers can pretty much use at any time to deny a warranty claim if they so desire. A warranty is always dependent on how a company chooses to treat it’s customers.
Of course if you click on the link: https://www.snapmaker.com/repair you just get a blank page. Their entire website needs a bit of help.
