I’m running in to a problem where PLA is breaking inside the nozzle on just about every run. This is Elegoo PLA.
It’s breaking just below the gear that loads/ unloads the filament.
Any suggestions on how to prevent this?

Filament easily break if its old and or wet.
Try drying the filament or a different spool or brand.
As stated, old filament can get brittle. Try drying it, and if that does not work not much else will.
PLA filament is highly sensitive to “heat creep,” where heat travels up the hot end into the filament path, softening the material before it reaches the melt zone. This can cause the filament to swell, leading to jams or breakage. Lowering the nozzle temperature slightly (for example, from 210 °C to 200 °C) can help. Beyond that, moisture absorption is the other main issue to watch out for.
